Mix the dry ingredients in a large bowl, then add water and oil and mix well (as usual, if you have a KitchenAid mixer, use it!), bearing in mind that the amount of flour is indicative. The dough will be ready when it will no longer stick to your hands, as is the case for bread.
Let the covered dough rise for about an hour in a warm and dry place; meanwhile, heat the oven to 250°C.
Divide the dough into 8/10 balls and flatten evenly with a rolling pin until a very thin dough round is obtained for each ball.
Bake the pitas one or two at a time: in a few minutes they will swell, creating a bubble of air inside, and they will be ready.
Take out the pitas, open them in half and serve them warm, filled with anything that your imagination suggests!
