In a big bowl, stir together flours, baking powder and sugar, then make a well in the centre and add butter and eggs.
Mix gently, first with a fork, next with your hands, rubbing the ingredients betweeen your fingers, until the dough comes together nicely. If the dough feels dry or simply doesn't come together straight away, feel free to add a little milk. When the dough is ready, wrap it tightly in plastic wrap and chill for at least 1 hour. In the meantime, preheat the oven to 350°.
Roll out the dough (keep it thin, the dough will slightly leaven in the oven) on a floured surface or between two sheets of wax paper and cut out the cookies with the cookie cutters of your choice.
Nicely arrange the cookies on a baking pan lined with wax paper then transfer the pan inside the oven.
Bake the cookies for 15/20 mins, until golden and easily removed from the wax paper surface.
Eat the cookies as soon as possible or store them in a tin box for a couple of days.
