2 Ingredient Banana Oatmeal Cookies
Can cookies be made with just two ingredients? At first, I was very skeptical and thought to myself that “no, this is impossible”. But then I came across an American recipe on Pinterest called “2 Ingredient Banana Oatmeal Cookies” (isn’t it shocking how all creative and ingenious things come from America?!) to bake simple, vegan, gluten-free, healthy cookies with only oatmeal and bananas, and it looked quite good in the pictures, so I thought I would give it a go.
I already had all the ingredients in the house (gathering only two did not require a lot of effort!) – a couple of somewhat ripe bananas, and oatmeal left over from Sara’s oatmeal and chocolate cookies I made for Christmas – so I had to try. I followed the simple instructions, and in about fifteen minutes I pulled out of the oven five satisfying “test” cookies.
2 Ingredient Banana Oatmeal Cookies
Ingredients
- 1 banana
- 50 g oatmeal or rolled oats
- optional toppings (chocolate chips, walnuts, raisins, cranberries...)
Instructions
- With a potato masher or a fork, mash the banana into a chunky purée. Stir the oats with the banana, keeping in mind that the amount may vary depending on the size of the banana, but the result should not be too moist, so err on the side of extra oats.1 banana, 50 g oatmeal or rolled oats
- Cover a baking sheet with parchment paper and drop the cookies down with a spoon. If you care for perfect looks, use a glass to gently nudge the dough into a round shape.
- Gently press any toppings you might want to add on top of the cookies, then transfer the baking sheet to the freezer for 5/10 minutes.optional toppings (chocolate chips, walnuts, raisins, cranberries...)
- Preheat the oven to 365°F. Transfer the baking sheet with the cookies in the preheated oven.
- Bake the cookies for 15 minutes, then take them out and gently remove them from the baking paper with the help of a spatula.
- Eat your delicious, healthy two-ingredient cookies right away, or keep them in a tin box and quickly warm them up in the oven or toaster before serving.
Silly but necessary alert: I don’t need to tell you that these cookies will taste like bananas, do I? Otherwise, what else would they taste like? If all goes well, they might taste a bit like some of the things you have added for toppings, but the banana flavor is there to stay. If you do not like bananas, try something else, like my amazing Nutella muffins with only three ingredients. They are very easy to make, too. Or maybe try vegan handheld mini pizza? They also require only a handful of ingredients and are ready in 5 minutes!
I do not want to hear that I forced you to eat bananas against your will, OK?
