Corn fritters with poppy seeds for a summer fest

I made these fritters from scratch, as I had 8 egg yolks left from chocolate mousse.
It’s a super easy-peasy recipe, give it a try!
Makes 6 fritters
- 8 eggs yolks
- 1 tin of canned corn or 3 steamed corncobs
- a handful of breadcrumbs
- a spoonful of poppy seeds
- a pinch of baking powder
- salt and pepper
Mix all the ingredients in a bowl, adding salt and pepper to taste when the mixture is ready.
Heat a pan on medium flame, sprinkle some olive oil and pour a spoonful the mixture in the pan.
Let the fritter become golden brown on each side, flipping it occasionally, then move it on a plate covered in paper towel.
Serve the fritters hot, with a side of healthy Mediterranean vegetables.
