Crostatine di pasta frolla alla marmellata

Tutti i mesi, quando arriva il momento della sfida dei Daring Bakers, Jasmine ed io cominciamo a preoccuparci: cosa ci chiederanno stavolta? sarà difficile procurarsi gli ingredenti? occorrerà molto tempo per preparare il dolce?
Questo mese ci è andata bene: bisognava “solo” preparare la pasta frolla in casa e fare una crostata, quasi troppo facile per essere vero!

The 2010 November Daring Bakers’ challenge was hosted by Simona of briciole. She chose to challenge Daring Bakers’ to make pasta frolla for a crostata. She used her own experience as a source, as well as information from Pellegrino Artusi’s Science in the Kitchen and the Art of Eating Well.

Provo a tradurre il tutto sia in italiano che in inglese, chissà mai che ci sia qualche lettore distratto di questo blog che ancora non sa preparare la pasta frolla.

For 10 crostatine you’ll need

  • 100 g superfine sugar (zucchero fine)
  • 235 g unbleached all-purpose flour (farina 0)
  • a pinch of salt (un pizzico di sale)
  • 115 g cold unsalted butter, cut into small pieces (burro, freddo, tagliato a pezzi)
  • grated zest of half a lemon (scorza di mezzo limone)
  • 1 large egg and 1 large egg yolk, lightly beaten in a small bowl (1 uovo e 1 tuorlo, sbattuti)

Mix together sugar, flour and salt in a bowl, then rub the butter into the flour with your fingers until the mixture has the consistency of coarse crumbs.
Make a well in the center of the mixture and pour the beaten eggs into it. Incorporate the liquid into the solid ingredients, and add the lemon zest to your mixture.
Knead lightly just until the dough comes together into a ball, then shape the dough into a flat disk and wrap in plastic wrap. Place the dough in the refrigerator and chill for at least two hours.
Preheat the oven to 190ºC.
Take the pasta frolla out of the fridge, lightly dust the top of the dough and your work surface with flour, then roll the dough into circles the size of your pans.
Flip dough over the pans, centering it, and delicately press it all around so the corners are well covered.
Press the dough around the border into the sides of the pans, making sure the border is an even thickness all the way around. Prick the bottom of the dough with a fork in several places.
Spread jam (or Nutella, or lemon curd or custard ect.) evenly over the bottom of your crostatine.
Put the tarts in the oven and bake for 30 minutes or until the tarts are golden yellow.
When done, remove the tarts from the oven and let cool. Make sure the tarts are completely cool before slicing and serving.

In una ciotola capiente mescolate farina, zucchero e sale.
Incorporate il burro nell’impasto lavorandolo delicatamente ma rapidamente con le dita fino ad ottenere una consistenza sbriciolosa.
Aggiungete all’impasto l’uovo sbattuto, la buccia di limone e impastate bene finchè non riuscite a formare una palla di impasto. Lasciate l’impasto così ottenuto nel frigo per un paio d’ore.
Scadate il forno a 190º C.
Tirate fuori la frolla dal frigo e appiattitela bene per riempire i vostri stampini da crostata.
Bucate il fondo dell’impasto delle crostatine con una forchetta, affinchè le crostatine cuociano in modo uniforme, poi riempite le crostatine con il ripieno che preferite (noi abbiamo scelto il lemon curd, la marmellata di albicocche e la Nutella).
Infornate nel forno già caldo e fate cuocere le crostatine per circa 30 minuti.
Quando sono dorate e ben cotte, togliete le crostatine dal forno e fatele raffreddare bene prima di servire.

  1. Ladies and gents, come qualcuno avrà notato è cambiata la fotina, che abbiamo rifatto perchè la precedente non ci piaceva :) Ci scusiamo per il disagio :)

  2. Sì, molto! Manuel mi ha rifilato la tortina con la marmellata, e io odio la marmellata, ma la frolla era così buona che ho deciso di chiudere un occhio sulla marmellata :D
    Anche la tua crostata con cioccolato e tahina sembra buonissima, amica… :)

  3. Ciao! Anche la vostra versione con il lemon curd non è niente male! Buona l’idea di fare delle crostatine con farciture diverse, la prossima volta provo anch’io!!

  4. Avevo intenzione di far conoscere la pasta frolla nel mondo, condividere questo gioiello della tradizione italiana. Una crostatina come quella della foto e’ irresistibile.
